Shiro powder is made from peas, lentils, and chickpeas that are dried and ground into a fine powder. The shiro powder is then blended with other spices and herbs – garlic, ginger, fenugreek, cardamom, and basil for instance. Shiro is often made gently hot with berbere.

Then, when you’re ready to eat some shiro wat, you reconstitute the flour in water – about one tablespoon for every half cup of finished sauce – add a touch of vegetable oil, then slowly cooked, stirring, until it thickens. Some cooks add more spices or even more berbere when they prepare the dish, or they may saute chopped onions and tomatoes in the inital step. Enjoy!
